We are excited about joining the family of food trucks at the Switchyard. What we offer is unique and different Traditional Native American Indian cuisine with a Texas twist. Our inspired chef Jennifer Scharen from the Culinary Arts Institute Dallas has had a lifelong dream of running her own food truck and serving food with great taste. She has found not only your ordinary taco but, a fry bread taco with chili beef tips! That sounds great and makes your mouth water just thinking about it. We are inspired by the legendary Bigfoot and with a legendary food, why not give it a unique name? On the menu side we have beef, chicken, and a veggie fry bread taco. The Sasquatch is unique all by itself... a hamburger with fry bread as buns! Oh and the dessert Fried Feathers is to die for with Lemon Mascarpone! We are happy to bring something different and look forward to serving this community in Saginaw!

My name is David Kincade. I spent 22 years in the United States Army. I have always had a passion for cooking. I grew up planting vegetables and cooking as a teenager for my grandmother who was unable to move around freely as she got older. I always knew that when I was done serving my country, I wanted to be in the food industry. I have experimented with many dishes and Mac n Cheese is one of my favorites. One day while just cooking I added Cajun seasoning, shrimp and sausage to a white cheddar mac n cheese. Everyone loved it. That night I had a dream, I had a restaurant and all I sold was mac n cheese. After doing months of research I decided to bet in myself and buy a trailer. I quit my job that I was making over 100k a year to peruse my dream. I truly feel blessed and I am excited to see this grow. I thank everyone for their support. I promise we will always have great customer service and greet our customers with a smile.

When I was a young child there was a woman who was very special to me, her name was Rosa George(Miss George to most) but to me Rosa. While I don’t remember everything about her I remember the grilled cheese sandwiches she used to make. The taste of real butter toasted bread in a cast iron skillet. When I was five years old she passed away and I looked everywhere for someone who could make a grilled cheese the way she did. It took another 10 years for me to find someone else who could make her grilled cheese, and through trial and error I found her grilled cheese again. I kept that recipe to myself and only made grilled cheese for those close to me. I’m now excited to share Miss George’s Grilled Cheese with everyone, and piggybacking on the same great taste she used to make I have allowed my pallet as well as my menu grow and mature. Our daily special's are breakfast grilled cheese and grilled chicken florentine.
